Avocado Beetroot Hummus Toast
A recipe from our Dubai kitchen — now made in Mexico City

Some recipes follow you. This one started when Rodrigo and I were living in Dubai, where hummus was as constant in our kitchen. We experimented with it the way I approach interiors: looking for the combination of color, texture, and proportion that makes something genuinely beautiful. Beetroot hummus was that vibrant, earthy, and exactly the kind of thing that turns a simple breakfast into something worth setting up a shot for.
Now we make it in Mexico City. The ingredients are different Mexican avocados are in another category entirely but the logic is the same. This is the version we keep coming back to.

This toast is not just colorful; it’s a celebration of flavors. Creamy avocado, sweet and earthy beetroot hummus, and a sprinkle of seeds or microgreens make every bite an experience. And honestly, it’s so easy to make perfect for a weekend brunch or a healthy midweek treat.
Ingredients:

1 medium beetroot (roasted or boiled)

1 can of chickpeas, drained and rinsed

1-2 tbsp tahini
-
1 clove garlic

Juice of ½ lemon

2 tbsp olive oil

Salt and pepper, to taste

1 ripe avocado

Whole-grain or sourdough bread, toasted

Optional toppings: microgreens, seeds, radish slices, or a drizzle of olive oil
Instructions:

Prepare the beetroot hummus:

Roast or boil the beetroot until tender.

In a food processor, blend the beetroot, chickpeas, tahini, garlic, lemon juice, olive oil, salt, and pepper until smooth. Adjust seasoning as needed.

Toast the bread:

Lightly toast your bread of choice until golden and crisp.

Assemble the toast:

Spread a generous layer of beetroot hummus on each slice.

Top with sliced or mashed avocado.
