AVOCADO BEETROOT HUMMUS TOAST

When Rodrigo and I were living in Dubai, hummus was a staple in our kitchen. It was our go-to comfort food, a healthy alternative to spicy sauces, and a deliciously versatile ingredient. Over time, we started experimenting with different flavors, looking for ways to make our meals both healthy and visually stunning. That’s when beetroot hummus entered our lives vibrant, earthy, and perfectly creamy. It’s one of those ingredients that turns a simple toast into a centerpiece worthy of a photograph.

This toast is not just colorful; it’s a celebration of flavors. Creamy avocado, sweet and earthy beetroot hummus, and a sprinkle of seeds or microgreens make every bite an experience. And honestly, it’s so easy to make — perfect for a weekend brunch or a healthy midweek treat.

Ingredients:

  • 1 medium beetroot (roasted or boiled)

  • 1 can of chickpeas, drained and rinsed

  • 1-2 tbsp tahini

  • 1 clove garlic

  • Juice of ½ lemon

  • 2 tbsp olive oil

  • Salt and pepper, to taste

  • 1 ripe avocado

  • Whole-grain or sourdough bread, toasted

  • Optional toppings: microgreens, seeds, radish slices, or a drizzle of olive oil

Instructions:

  1. Prepare the beetroot hummus:

    • Roast or boil the beetroot until tender.

    • In a food processor, blend the beetroot, chickpeas, tahini, garlic, lemon juice, olive oil, salt, and pepper until smooth. Adjust seasoning as needed.

  2. Toast the bread:

    • Lightly toast your bread of choice until golden and crisp.

  3. Assemble the toast:

    • Spread a generous layer of beetroot hummus on each slice.

    • Top with sliced or mashed avocado.

    • Add optional toppings for extra crunch and color.

  4. Serve and enjoy:

    • This toast is best enjoyed fresh, with a cup of tea or coffee, while admiring the colors on your plate — perfect for your morning Instagram shot too
